Brown Sugar Shortcakes with Roasted Rhubarb ACTIVE 15 MIN. - TOTAL 35 MIN. - SERVES 4 Preheat oven to 450°F. Whisk together ¾ cup heavy whipping cream, 2 Tbsp. light brown sugar, 1 tsp. vanilla paste or extract, and 2 tsp. grated lemon zest in a medium bowl until smooth. Stir in 1 ¼ cups self-rising flour just until a shaggy dough forms. Use a ¼-cup measuring cup to scoop dough into 4 rounds; place on a parchment-lined baking sheet.
