come for TEA What comes to mind when you think of springtime? For me, it’s warmer weather, flowers in bloom, Easter, white linen, and vibrant shades of green. I also think about the new growth on tea bushes—known as first flush—and how that will soon become tasty tea in my cup and yours. When I started becoming interested in tea, someone told me that I should drink green tea for its health benefits. So, I did, but I found it to be bitter and astringent. I decided that maybe if I opted for flavored green tea, instead of the pure kind, I would be able to tolerate it better. I still found it unpleasant to drink. Joyful Teatimes “In Uganda, there are many widows, both young and old. They have suffered much from wars, AIDS, and poverty. While my husband and I were sent there as missionaries, I wanted to do something special for them and bring some joy into their lives. I planned an afternoon tea party! Friends in America sent me china, teacups, and teapots to use. We invited widows from many villages. We had 70 ladies attend. We set tables around my veranda and my tearoom. We covered the tables with white linen tablecloths and an abundance of tropical flowers, beautiful teapots, and teacups, along with trays of sweet bread, little sandwiches, and fancy cookies. Pistachio Sablés Makes 48 Sablé is a French version of shortbread, adding egg yolks and omitting cornstarch. This gives it a less crumbly, more durable texture, sometimes referred to as a sandy texture. Sablé is the word for sand in French. 2½ cups unbleached all-purpose flour⅔ cup granulated sugar2 egg yolks1 teaspoon vanilla extract½ teaspoon fine sea salt8 ounces cold, salted butter, cut into little pieces½ cup finely ground roasted and salted pistachio nuts⅓ cup green sanding sugar1 large egg, beaten • In a large work bowl of a food processor, blend together flour, granulated sugar, egg yolks, vanilla extract, and salt until uniform in consistency. • Add the butter pieces to flour mixture and blend until the dough is smooth. March 8 Women in History Afternoon Tea 2:00 p.m. Pritchard House Museum Titusville, Florida In honor of Women’s History Month, join Pritchard House Museum for a memorable afternoon tea. Guests will be served tea, sandwiches, scones, and sweets by costumed docents. Following teatime, tours of the circa 1891 fully restored Queen Anne home will be conducted, featuring a special exhibit of antique and vintage clothing displayed throughout the rooms.
